- 4 boneless skinless chicken breasts
- to taste Salt and pepper
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup roughly chopped spinach
- 1/2 cup sun-dried tomatoes, thinly sliced

- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium heat. Add the chicken to the skillet and cook for 5-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the heavy cream, chicken broth, minced garlic, Italian seasoning, and grated Parmesan cheese. Stir to combine and bring to a simmer.
- Once the sauce is simmering, add the chopped spinach and sliced sun-dried tomatoes to the skillet. Stir until the spinach has wilted and the tomatoes are heated through.
- Return the chicken to the skillet, spooning the sauce over the top of each breast. Continue to cook for a few more minutes, until the chicken is heated through.
- Serve the creamy Tuscan chicken with a side of your choice, and enjoy!
