Crispy Korean Tofu Bowls with Sesame Dressing

- 14 oz firm tofu
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil
- to taste salt
- 2 cups cooked jasmine rice
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 2 green onions thinly sliced
- 1 tablespoon sesame seeds
For the Sesame Dressing
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 clove garlic minced
- 1/2 teaspoon grated ginger
- 1 teaspoon sesame seeds

- Start by pressing the tofu to remove excess water. Wrap tofu in a clean towel and place a heavy object on top. Let it sit for about 15-20 minutes.
- While tofu is being pressed, prepare the sesame dressing. In a small bowl, combine soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and sesame seeds. Stir well and set aside.
- After tofu is pressed, cut into 1-inch cubes. Place tofu pieces in a bowl and sprinkle with cornstarch. Toss gently to ensure all pieces are coated.
- Heat vegetable oil in a large skillet over medium-high heat. Add tofu cubes and fry until golden brown and crispy on all sides. This should take about 10-15 minutes. Once done, remove tofu from skillet and sprinkle with salt.
- Assemble the bowls: Start with a base of jasmine rice, then add a portion of crispy tofu, shredded carrots, sliced cucumbers, and green onions. Drizzle the sesame dressing over top and garnish with additional sesame seeds.
- Serve the Crispy Korean Tofu Bowls immediately and enjoy!
Notes
To make this recipe gluten-free, use tamari or coconut aminos in place of soy sauce.
